Mutton Kala Masala Curry Recipe - Ancient Aromas

Recipe:

Ingredients: 500g mutton (bone-in), 2 medium onions (finely sliced), 1 large tomato (chopped), 2 tbsp ginger-garlic paste, 3 tbsp oil, 1/2 cup grated coconut, 1 tsp turmeric, 1.5 tsp red chili powder, 2 tsp coriander powder, 1 tsp cumin powder, salt to taste, fresh coriander leaves for garnish, 3 tbsp Maharashtrian Goda Masala or Ancient Aromas Kala Masala.

Step 1: Heat 1 tbsp oil and roast the grated coconut until golden brown. Allow to cool and grind into a smooth paste. Set aside.

Step 2: In a pressure cooker, heat 2 tbsp oil. Add sliced onions and sauté until golden brown.

Step 3: Add ginger-garlic paste and sauté for 2 minutes until raw smell disappears.

Step 4: Add chopped tomatoes and cook until soft. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Step 5: Add the cleaned mutton pieces and sear them for 5-7 minutes until slightly browned.

Step 6: Add the roasted coconut paste and 3 tbsp of Maharashtrian Goda Masala. Stir everything thoroughly.

Step 7: Add 1.5 to 2 cups of water. Close the lid and pressure cook for 4-5 whistles or until the mutton is tender.

Step 8: Open the cooker, simmer for 5-7 minutes to thicken the gravy if needed. Adjust salt and spice. Garnish with fresh coriander leaves and serve hot with rice or chapati.
